I have plenty of spare Grey Knight bits left over for icons and stuff I'm just stuck on what to use for a head and armour.

At any rate, my advice, if you want to avoid Coteaz then, would be to buy a SM Commander similar to Tek's above, and then bling it out. Maybe put GK shoulderpads (or a GK shoulderpad) on it.
