Good pin vices are sort of specialty items, so you aren't guaranteed to find what you want at any given hardware store. If GW is what's available, it'll do the trick, just fine. Personally, I recommend something with a swivel back and interchangeable collets - lets you fit any bit you might need, is quite comfortable, and allows plenty of control while exerting greater pressure, when it proves necessary.

For magnets, I recommend you check out K&J. They have reasonable shipping rates and their selection is ludicrously broad. If you aren't in a rush, check their closeout/overstock/whatever page periodically. Occasionally, you can find awesome deals on magnets of a useful size and shape. Pretty sure I paid well under $15 for 100 3/16"x 1/8" N42 neodymium disks, bought and shipped.

Regarding paint stripping, you can use damn near anything on the metal ones, from alcohol to nail polish remover to turpentine to brake fluid. All my model stripping has been plastics, so far, so I've had no need to experiment with the big guns.
