I think the idea that they get more orky knowledge as they grow older is just that they have seen more combat. and as well know, orky knowledge is combat. In 40k, I imagine that all Orks darken and get bigger as they fight and get older. One guy I know mentioned a theoretical ork as big as a planet and as black as space. Hmm. That Lexicanium link claims that Orks have green blood, yet other sources suggest it is supposed to be red. GW says red. There actually was a short White Dwarf article about this very question.
That being said, it is well possible that some novel or whatever has them have green blood, and this is why Lexicanum says what it does. Prime example on what I keep preaching about "canon", interpretations and wikis.
