I'm working on a sons of horus paint scheme as seen below. The way I'm doing it is based on a tutorial I saw online. Essentially it's prime white > base coat light grey > wash with watered down green and black washes. I like the color I get out of that process, but It's causing me problems in terms of being able to highlight / shade it leaving me with a model that I feel looks unfinished. So I'm thinking maybe before doing the color washes, I could highlight and shade with different tones of grey. Any thoughts on this?

I think that's exactly what I was looking for. I just didn't know what to call it. For anybody else interested, I found this video: http://screamingheretic.com/2011/05/painting-101-pre-shading-your-models/. Should work out the same with the washes as it does for the airbrush, I'll be giving this a go. You spray the model black then once it drys you spray it white from an angle. The idea is to get a gradient going where the parts of the model facing upwards are nice flat whites while the more verticals are more greyish and the down facing areas black.
