I suggest 4' by 6', but I personally have a ping pong table. You could get a DIY one from Kmart (you're an Aussie, right?).

While it has a hole in the middle, you can play a game up to 4' by 10' or two games of 4' by 6'., all while having 6" each side for models in reserve, dice etc.

It cost me around $50 USD to construct. I use some saw horses (I built those as well for woodworking) as the legs and they are quite stable. You could section it off so that you have 3 smaller, more manageable pieces, but you would have to find a way to support them while playing.

And I agree, don't do snow. for making it on the low budgets side you could just use wood glue, sand , and paint over it with white latex paint.
