My go-to matt varnish is Testors Dullcote - if you can find it, that is. If you're in Sydney, the Tin Soldier in Penrith, or the HobbyCo in the CBD occasionally carry this stuff.

The Army Painter matt varnish is also pretty good stuff.

And in a pinch, you can brush on Vallejo Matt Varnish - it's available at almost every shop in Sydney, from the Hall of Heroes in Cambelltown to the new shop right above the Sydney GW Battle Bunker.
