Everything they released from 1996 through 2000 is pretty awesome (The Jester Race, Whoracle, Colony, and Clayman). Even though Clayman was the beginning of the transition from melodic death metal to the more "alt-metal" sound they're into these days.
I was really into In Flames after I quickly outgrew my metalcore phase (oh god, so terrible...) and started listening to actual metal. Kalmah (my favorite metal band) and In Flames were pretty a pretty big inspiration to the band I played in after I got out of high school (back when metalcore and screamo where still all the rage).
I highly suggest you check out Kalmah, specifically the albums "Swamplord" (the track "Hades" is my favorite) and "They Will Return" (everything is good).

No you don't have to be a metal head to tell the difference but it helps. But to understand the bands importance you do have to be at least into metal. They were pretty progressive in the 90's choosing to forgo long winded guitar riffs for shorter choppier riffs that were extremely catchy with great melody while still being ultra heavy. A lot of bands since have tried to copy the style and sound but haven't been able to, to the quality Death did. Chucks death from brain cancer was one of the things that basically killed off the metal scene that at the time (late. 90's)was thriving in Florida.
