Trying to source a movie quote

When I was little, probably about 15 years ago now, I watched a western film with my father. I can't remember much of it, except that it involved an older gunslinger and a younger kid who thought he was hot-gak (obviously gets schooled by the older gunslinger who takes him under his week and teaches him the ways of the west) going on some sort of mission. I seem to recall there was a train heist involved at some point (as in they literally jacked a train to accomplish whatever it was they were trying to accomplish, and in the process fought off an attack by some sort of mounted outlaw gang, possibly involving dynamite). Keep in mind, I might be confusing some films here, but I'm reasonably certain these all come from the same plotline

Anyway, the quote in question, was something to the effect of "Never trust a barber." (if you can correct the quote, even better) It is, as I recall, a line delivered to the younger guy by the old gunslinger as a piece of life advice, and later becomes relevant when, towards the end of the film, the younger guy (who IIRC is now without the guidance of the gunslinger who had passed away earlier on) sits down at a barber shop for a shave. The barber lathers him up, etc. and is about to begin shaving, when the kid realizes that the Barber is going to attempt to slit his throat, I believe in order to claim some sort of bounty or something, and (IIRC) he puts a bullet in the barber.

I believe there was another quote in the film, something about "the only way to become a hero is to die one", which was another piece of advice given to the kid by the gunslinger, might be helpful in sourcing the film... Anyway, any help you can give me in sourcing the film would be appreciated.

Trying to source a movie quote

Maybe it's "My Name is Nobody".
There's at least the train scene with dynamite, an older and younger gunslinger, the final quote seems to fit as well and possibly the barber scene. It's been too long for me to really remember and i might be mixing things up though.

Trying to source a movie quote

Definitely "My name is Nobody" with Henry Fonda and Terence Hill.
The old gunfighter doesn't die, though. The young one sets up a fake duel between the two so the old one can now finally stop looking over his shoulder all the time, and the the young dude (played by Terence Hill, I believe) gains fame as the sharpshooter who killed him.

In Happy Days he was Richie Cunningham. I think.
