Personally, I'd base the decision on what you want to get out of posting the pics, as well as how you plan to go about it. If you're simply looking to share your finished armies with a few shots of each, a single Showcase thread would do. If you'll be posting tons of images, especially detailed shots on which you'd want specific feedback, a Showcase thread for each will likely keep things more focused, as well as cutting down on the number of images to be loaded. Work in progress goes into blogs ImHo.
Completed armies should fit into P&M showcase , either all of them at once ( a 40k thread and a whfb thread maybe ) or one per month...
I also like the idea to store the Army in Articles/Armies, where you could keep the details and pics of everything.
Thinking about it, maybe create an article per army, start a showcase thread with an overview pic of each army and a link to the articles?

Wouldn't post each unit piecemeal in P&M threads.
