get one side wet, peel off, score/mark the foam in the pattern you want - you can use like a pencil, ballpoint pen to make a fairly nice indent without tearing it if you're careful. Structural parts you don't need to take one of the paper layers off at all, just score one side and break like plasticard (snap it).

But if you can, get some Hardboard, or Masonite.

get it cut and it should work for most of your needs.

It will warp over time if its not sealed.
