Returning Player looking for Advice

I'm returning to 40k after a 5-year layoff, hoping to use my old models with the new Codexes.

My models are pretty hotch-potch, mostly my 3rd Edition Sisters/ GKs/ Inquisition army, a few remnants of my 4th Edition Space Marines army, and my 5th Edition Space Wolves army. I've picked up the relevant Codexes and am in the process of reading up on the rules and writing up lists, but I'm looking for a bit of advice on some specific issues I've run into so far.

So. Questions!

-- I have 40-odd Kasrkins that I was using as Inquisitorial Stormtroopers during 3rd Ed, but the new ]|[ Codex has no option to field them anymore (other than as "Acolytes", which is likely to get expensive quickly, since they all have carapace armour and lasguns/ special weapons). If I want to field them as allied Stormtroopers, what Codex would be the best to buy?

-- What's the general trend in army composition? Is it still all "basic dudes with meltaguns and METAL BAWKSES" or is there a bit more flexibility now?

-- Imperial Knights. I love them. I played Epic a bit as a kid and have dreamed of Titans in 40k ever since, so I want to get me some Knights - but I remember in 5th Ed everyone hated the munchkin nerds who brought Dreadknights to the FLGS, and I'd like to avoid being pegged as such if at all possible. So, are the Knights a balanced inclusion, or are they pay-to-win failsauce? I've seen a few batreps with them and they don't seem especially killy or resilient, but what's the general feeling about them?

EDIT:

-- Can someone clarify the new Force Org Chart system for me? Is there an army-wide Force Org chart that all of your detachments must fit within (like it was in previous editions), or do seperate detachments each have their own Force Org chart and the only limitation is the points cap?

1. Militarium Tempestus can take Storm Troopers (Scions) as troops.

2. Very rarely do people take large numbers of elite troops, you tend to see large elite units; such as knights, or fast elite units; such as bikes.

3. Depends on your local meta: you could be the only one who has ever heard of super heavies and therefore be a massive pain, you could be in a meta where Super Heavies are common and can be dealt with but are still deadly OR you could be in the meta where your Knight gets blown up first turn because everyone takes OP units.

4. You can choose to use FOC, either the ones in the rule book or ones in your codex, or you can go unbound. If you go unbound you can take whatever you want with only point restriction but you will lose detachment benefits, such as objective secured.

Thanks! As far as the Force Org chart goes, does this mean I could take, for example, four seperate Combined Arms detachments of Sisters in the same army, even though I'd end up with 4 HQs and 8 Troops?
