Now I always like to picture my army before I start anything and see if my picture fits with the army.

For KDK I've thought of a Chaos lord/leader wandering through planets leading a small warband/horde of Khorne Daemons.
I don't plan to have a lot of the BIG daemons (Soul Grinders, Bloodthirsters etc.)- will this still be viable? Or would that reduce the strength of the army a lot?

So maybe a Chaos Lord on a bike with other chaos bikers, bloodletters and flesh hounds making the core of my army was the picture I had in mind.

And then if I decided that I don't like KDK i could move over to Word Bearers on something...

Lastly, for those who have or had a KDK army- how is the hobby aspect of KDK? Were the models hard to assemble? Do I need to do a lot of converting?

And is there anything else I should know before starting?

You don't have to have the big monsters but without SoulGrinders then you'll be lacking in terms of range and your bikes will have to pull their weight with their meltas.

As far as converting goes, you'll need to convert a lord on a bike (or a juggernaught might be a better idea) and you might want to look for cheaper alternative to flesh hounds, since you'll be using a lot of them, but besides that it's all pretty standard.
