I use a satin spray for interim varnishes and a brush on matte from Windsor and newton for final finish. It's designed for canvas paintings and is purely for finish, not protection. I used to use humbrol enamel spray matte but got pissed off with the cans which kept failing after a few sprays.

But should i do it on a large model like GUO? or would it not be worth it on some thing that big because it would ruin it or some thing, and mainly use it on Smaller things.

Do you generally varnish, and if so spray or brush?

I think you are in danger of over-thinking things here. Varnish choice basically boils down to personal preference; whether you prefer a matte or shiny finish. Personally, in most cases I prefer matte. I have a spray can of matte varnish that does the trick 99% of the time. For the occasional times when I want or need a specific model or part of a model to have a shiny finish (like a gemstone, for example), I have a pot of brush-on shiny varnish.

Most people will use a spray, matte varnish I would suggest.
