Perhaps convert one from a grenade launcher and a chaos plasma pistol, thats what I did on my Cadians, looks good.

Or a plasma pistol and a lasgun.
Or you could track down the old metal 2nd ed. catachan with plasma. Or the IG priest's backpack with the plasma gun.
Or just get a plastic plasma gun.

I have theorized that the lasgun can be modeled into a meltagun by using cylinder PVC pieces.... however a plasma gun is fire different from any other weapon... your best bet is to utilize Space Marine plasma guns in place of plastic lasguns.

I cut down a scout sniper rifle and added a marine plasma pistols muzzle to make a plasma carbine. Looks pretty cool.

There is a catachan plasma gunner figure. It's metal.
I just use a spare plastic plasmagun from a SM.
I have enough spares (I have 6 tactical squads for my company, and 12 plasma guns).

I'm currently about halfway through converting a few metal plasma guns from GW's "bitz" pack for use with my Cadian-based guardsmen. I've found that sawing off the stock, grip, marine hand, and a few other parts, then combining them with grenade launchers works nicely (particularly since grenade launcher parts are so plentiful). I assume that this technique would work reasonably well for Catachans, although I'm not sure how many grenade launchers they come with (other undesired special weapons could also work).
Note that some pinning is required, as metal and plastic don't stick together nicely with glue (this is the first time I've tried pinning, and it really wasn't as hard as it sounded).
Here's a sample:
