I play Daemons, and I've found I have an extremely tough time playing against them. The fact that they're flexible enough where I'm playing against a different army each time, and that my opponent can custom tailor alot of his list to fight my Daemons has been giving me alot of headaches.

In particular, I was wondering how to deal with:

(1) What are some strategies for dealing with Steam Tanks? With a movement of 30 something inches (maybe more, I'm not sure) they're hard to avoid and hit like a ton of bricks. Even worse, you don't get any points for it unless you destroy it completely, and to do that you have to devote much more points than the Empire player does to field the thing.

(2) Empire gun lines seem to decimate a good chunk of my mostly CC oriented army before they reach the other end of the table. In particular I seem to be having trouble against the Hellblaster and Great Cannons which chew up my units (he usually takes an engineer or two to reroll misfires)

(3) Empire magic. Seems like Empire can get alot of wizardry for alot less point than I could without doing a purely Tzeentch army or using Special Characters.

(4) Which would be a better choice against Empire: a Keeper of Secrets or GUO?

GUO is better against empire because it's tougher and with a balesword it will kill a Stank in one turn.

This might help if you listed what you have.

Here's the list I was thinking of running for my next game:

Great Unclean One (Trappings of Nurgle)(Level 3 Wizard)
----------------------------------_______
9 Pink Horrors (Icon of Sorcery)
Herald of Tzeentch (Power Vortex)
5 Flamers of Tzeentch (Pyrocaster)

10 Bloodletters (Champion)
Herald on Juggernaut (Armor of Khorne)
5 Flesh Hounds of Khorne

14 Plaguebearers (Standard, Champion)
(Standard of Seeping Decay: 25 pts)
Herald of Nurgle (Noxious Vapors: 25 pts)
(Standard of Chaos Glory: “12 Stubborn)
9 Power Dice; 6 Dispel Dice

The past few games I've been using the KoS, but after seeing him get killed my Great Cannons and Hellfire Guns I think I'm going to try the GUO I just purchased next game

Couple small units of furies would probably help a lot vs the warmachines. You could also give the tzeentch herald a spellbreaker for additional magic defense.

standard of sundering is better than glory and I think you need at least 10 horrors...10 bloodletters are a waste of points also

Bloodthirster vs Stank = dead stank.

Flesh hounds > gun line. You should be in combat 2nd turn.
Also vs gun line go a unit of 20 plaguebearers with herald on palliquin with slime trail. It is one of the hardest to kill units in the game. T4 + 5+ ward save + regeneration.

Standard of sundering shuts magic down... use it.

I'd go KOS with torment blade, sporific musk and siren song, and allure of slaanesh. Will smash almost anything (just avoid characters with the speculum). The GUO is too slow.

Thing about Bloodthirsters is that Van Horstmann's Speculum was designed to make your opponent's Bloodthirster cry. Any list that has a steam tank will have someone with the Speculum. Combined with Great Cannons I'd say Empire armies are the best equipped to take out Bloodthirsters.
