This is probably a pretty obvious question but I thought I'd ask before I started putting them all together.
Say I'm playing a game where everything needs to be WYSIWYG, My Sanguinary Guard would have to be models with Death Mask heads in order for me to take the option in the Codex and vise versa if I didn't want the option.

yikes... are they really that strict about stuff like that?
Here if it was on my list (give a copy to my opponent) and I vocalized it, I would be all set.
If not, perhaps you could paint, just the face, a different color, like silver or black.

Sometimes they are depending on the situation. Like we hold tournaments every now and then and last time we had one we had a big problem with WYSIWYG. So now they are a little more strict about it in that situation.
I just think the Death Masks look cooler (And I dislike Space Marines without helmets.) So It'd be cool to just model them with death masks and only use the option here and there, cause it's really not that good.

Yeah, magnetising the whole head would be the easiest solution. Hmm, trying to think of any other wargear where this would be useful - only a few rarities like DA's Iron Halo spring to mind.

From my understanding people usually care less about a modeled upgrade that the unit doesn't actually have/use than about purchased/used upgrades that aren't modeled. Generally, if you tell your opponent, "They don't have death masks--those just represent regular helmets," that would likely go over better than "Oh, by the way, this squad has a flamer in addition to their bolters". This isn't going to be universal, though.

I'm a pretty big stickler for WYSIWYG. If it's an upgrade, I want to see it modeled so I can play accordingly. Nothing worse than thinking that squad of assult marines coming up the flank has just ccw and bp only to find out he payed for 2 meltas and a fist...
That said, I don't think you need to magnetize the heads. I also prefer my marines with helmets, but I'd be happy to play you with them built as you like:
All helmets
No helmets
Mix of helmets and hair

The question, though, seems to be: Would you care if a unit had two meltas and a power fist modeled, but he'd previously told you and only used the mechanics for a CCW and bolt pistol?
