The planets are SO varied in their environment/culture that there is no universal sports. I would imagine that gladiator styled combat or strength tournaments are quite common throughout.

In the Gaunt novels the Guardsmen play a form of Football in their down time. They also have a form of paintball for training (Guns of Tanith book I think).

There's also a lot of gambling and card playing mentioned.
