The best use I've found with Plasma Pistols is chopping them up a little and making more Plasma Guns/Combi-Plasma. As mentioned above, with all of the kits coming with them (some multiple) it's on of the easiest guns to quickly convert and put in a mini's hands.
Also, +1 on the idea of the extra CC attack from a pistol being the pistol profile; I'd consider bringing some special pistols in that case. Maybe.

Pistols would be far more interesting if the bonus attacks they provided for being a second close combat weapon would use the profile of the pistol. Hopefully Cypher is a template for things to come.
It would make other models with gunslingers very interesting as well as you could then possibly make all of their attacks use the weapon profiles. How to work out different pistols on one model could prove challenging however.
Seraphims with melta-pistols would be super interesting to charge into dreadnoughts or any vehicles if they flubbed their shooting attacks.
Handflamers would also be interesting to tweak out, however the wall of death rule could be used for those possible.
It would certainly help bring the plasma pistols back into the game.

Why would it not? You are basically using the pistol as a shooting attack but in CC.
I see no reason why this isnt a rule and would welcome it, it would give a HUGE reason to take pistols and give us a new style of play.
I can see reasons for and against.
Suddenly having a guy go from 2/3 Str 3 ap- attacks to Str 7 ap2 for the same cost as a power sword/axe etc. would be a bit extreme.
Maybe if they could use it for the "bonus" attack you get for having multiple combat weapons (I.e one shot only)
A little boost but not rendering typical power weapons pointless.
Thats how I was suggesting it not all its attacks just the bonus "1" attack.

I suppose a change to pistols in CC may make them worth their while for once, but have we at least agreed that in the current iteration of the rules, plasma pistols are painfully inefficient?

With Orks the current extra attack in CC is better than if the pistol fired: WS4/5 is much better than BS2 on any turn Orks get their Furious Charge. Meks can take a KMB pistol but is very dangerous with a 6+ armor save. I miss 4th edition where a pistol would grant an extra attack when paired with a PK!!!

It an option to use it as a CCW or the pistol profile not a must.
