If they presented a variety of chapters, not JUST ONLY the Ultras, I'd be a lot happier. They do it with other factions...

But that's a bit offtopic. It has been discussed many times before.

You're absolutely correct that Games-Workshop writers seem to be absolutely obsessed with shoehorning that single chapter into every event in the Galaxy. It's utter laziness, which is unfortunate, because I don't see anything wrong with Ultramarines in particular, apart from their stupid name of course.

Weird that this is even a question, honestly. There is no poster boy but the Space Marines, and the Ultramarines are their prophet.

The smurfs are the main poster boys, but the Imperial Guard get a lot of attention in the novels too. And the t-shirt and flashlight guys also embody the Imperium's hopeless but relentless struggle.

As far as most iconic... Chaos Space Marines arguably. Nothing defines 40k as much as the Horus Heresy and the Long War.
