I love my sentinels. Granted, I play with Tallarn traits which really gets the most out of them, but with really any doctrines they're a useful little chess piece.
I've always used scout sentinels. The added durability of the armored ones is nice, but still not enough to keep your opponent from popping the guy if they really want to and it also loses the tactical flexibility of the scout move and 9" movement. Without Tallarn, you are hitting on 5s, but if you're deploying them up to the line, the scout move alone is often enough to get them on a midfield objective.
The suggestion that others have made about HF's on them is an interesting one for GSC. I wouldn't want to dissuade you from that, sounds fun. But, I've had great luck with AC's and hunter-killer missiles on them. Sentinels generally don't live long, but are frequently disregarded as threats that can dish out firepower. I always run three -- two AC's one LC and all with HK's and I've rolled hot at times and knocked half the wounds off a knight on turn 1 before.
Definitely worth trying out if you're trying to disperse a bit of turn 1 long-range AT rather than relying on your LR's for that.
