As the title says, what should I give my priests? I was thinking just JPs and thats it but is it worth giving them power weapons or something?

I would say no, generally a Sang Priest will be singled out in combat and taken out. With that in mind, I generally keep mine as least threatening as possible, so no wargear upgrades. Generally my opponent then sometimes has to divide his attacks between the squad, the sang priest, and hopefully a libby if he is in the scrap too.

JP are just fine for most of the sang priest's functions. That he's an IC makes power fists and other close-combat weapons less useful, because he can be singled out and eliminated in cc. If you're putting him in with terminators, I'd give him termi armour so that his chances of dying to a stray wound or two are diminished.

One thing I have noticed is that a lot of people don't realize he's an IC and therefore don't think to single him out. Its just like the Sanguinor, its easy to miss thats he's not an IC.

If you buy him a jp buy him a power sword. The cost increase is minimal, he is already going to be singeled out, and he hits on I5 so if he is singeled out at least he already did his attacks before I4

The only other option I like is a combi melta

Remember that your Priests are Independent Characters, so if they base an enemy unit they can be singled out and attacked. They only have 1 wound, so they aren't super difficult to do this with. In order to protect him and keep his buffs on your units you won't want him in base contact for close combats. I'd keep him naked, or if he needs a Jump Pack to keep up with his unit, get one. I wouldn't mess with the CC equipment though, he's too vulnerable to be rolling into combats like that.

Base the power fist with an assault marine, and base a model 3" away from the power fist with the priest. Now the power fist can not swing at the priest and the priest gets to use his four S5 I5 WS5 attacks. If that's not possible in the movement phase land the priest 7" from the nearest enemy model so he doesn't get sucked into CC on the first round of combat, the rest of the squad can prevent enemy models from basing him.

Never, ever, ever take a nakid priest with a jump pack because you can never have enough melta If you really hate the idea of giving a priest a power weapon give him a combi melta instead. Can an army ever really have too much melta?

If you field a DoA army then give him JPs.
If you field Terminators, then you might attach him to them, giving him terminator armor.
Keep the upgrades low since he can be singled out in cc and will eventually die quickly (as a 1-wound model).

Priests don't need to be in combat for their ability to work.

if it's possable you might keep him safely in a Rhino or Landraider to provide the bubble.

if he must go with the squad you can just minimize the enemies he is in BtB with.

basically, I'll put him:
TDA one in with TH/SS termies (2+/3++/4+++)
JP one in with sanguinary guard
normal one in with honour guard.
power weapons? yes. a S5 CCW is a lot worse than a S5 power weapon. He's basically a sergeant that supplies a FNP/FC bubble. Do you normally equip sergeants with power weapons? If so, do it.

The Midlands

Just on the point of singling Priests. I prefer to use the Honour Guard unit w/ the 'free' Priest so he can't be singled. If you want to give him a power weapon etc you can give it to the Veterans. The problem of keeping him near squads is the hard one. That is the main option if you would use him bare, as I do.

Put him in a tranport with a squad of our choice, and disembark the squad and assault, leaving the priest hiding in the transport- they still get the bubble, and he can't be singled out! easy!

They only get FnP if the unit is still 6" after it makes it assault move.

This is true, unless they disembark the 2", then assault 6". Also I don't think you can unattach the SP from the unit while in a transport.
