Since I'm not a huge fan of the Minotaur painting scheme featured on Games Workshop, I was hoping to get some inspiration from someone else.
I'm looking for more of a, just-had-a-roll-in-the-dust-and-a-Woodelf-for-a-chewtoy, kinda look and less of a, just-had-my-body-waxed-and-are-heading-for-the-beach-in-my-speedos kinda look.
any ideas are welcome, and hopefully I wan't have to slaughter the first minotaur, that hits the paintstation.

That is the most awesome description of what your looking for ever.

More helpful, are you talking about the red and yellow Minotuar chapter? If so I have no idea how you would keep that color scheme/pattern and get what you want. Then again the Howling Griffons are the some colors and look tough. Maybe use them as inspiration?

The harbour of Thor

I like the older beastmen color scheme. Vermin brown for skin and schorched brown for fur.
