Would anyone know if there is a list of deathstar units anywhere. They might be running a death star tournament a my local G.W. and I would like to know what units in each army might be showing up for a game.

Couldn't help you with other armies but nid deathstars usually are:
Tyrant - bonesword/lashwhip, TL devourer, armoured shell, old adversary, and 2-3 gaurd with lash whips. Maybe a prime, and possibly with both the tyrant and prime with regeneration. Also possible to drop the bonesword/lashwhip, old adversary, and lashwhips fromt he gaurd, and instead pick up another TL devourer.
Fexstar - 2 seperate carnifex broods, each with 1 carnifex and a prime attached. Likely either to be barebones melee or 2x twinlinked devourers.
Also expect a gaunt screen, adding the non-monsterous creatures to this list gives them a large chance to earning a cover save.

These are not all, but the ones I can think off the top of my head:
Codex Marines:
TH/ SS Termies in a Land Raider Redeemer/Crusader. Usually has one or more HQs including Vulkan, Lysander, Khan, Librarian, Cassius, Calgar.
10x TH/ SS Termies with Shrike infiltrating, and possibly another HQ (chaplain, libby, lysander)
Space Wolves:
Thunderwolves. Variations include 4 tooled up wolf lords with 15 ferensian wolves as meatshields, or Just thunderwolf lords with regular Thunderwolf cavalry, all different wargear. Wound shenanigans, T5 multiwound, 3+ invuls.
Blood Angels:
Assault Terminators in a Redeemer/crusader. Usually Terminator Priest and or Librarian attachted. 2+/3++ with FnP
Assault Terminators with Terminator Priest or Libby in a Stormraven, also has a Furiso dreadnought.
Eldar:
Jetbike seer council. Very fast, Tons of psyker abilitys, including rerollable invul saves, str 9 on the charge against vehicles. Not too familiar with them, I haven't seen them used.
ORKS
Nob Bikers, classic deathstar, warboss on a bike with nob bikers, painboy, cyborg armor, all different wargear, very tough and killy and fast.
Ghazzy with misc orks in a battlewagon
Dark Eldar:
Vect and Incubi in the Dias of destruction
Nids

-30 Death Company loaded up with the scariest gak you can think of with Lemartes
Absolutely killy, Lemartes lets them reroll both failed hits and wounds in close combat, and they provide a crap tonne of attacks to boot. The only problem is that they're absolutely indiscriminate and largely uncontrollable.

For Dark Eldar you will probably see two squads of packed out Beast master squads with 5 beastmasters (one with an agoniser probably) 10 Kyhermae and 6 razorwing flocks, will eat anything for breakfast, especially TH/ SS termies from my play testing, dropping out of one of two WWP, 24" assault range out of the portal, some ridiculous amount of wounds, some 86 attacks on the charge (36 rending) and 4+ invuls (Khymerae), not a pretty sight, and all for under 400 points.
Also I'm not sure if something like a massive power blob squads and a crud load of manticores would count as a Deathstar army (Couldn't think of any single thing for guard, only combinations)

Also perhaps the Farsight bomb might make an appearance

Throw that in a stormraven with a dual-talon DC dread and give them power weapons and fists and you've got a point-sink BA deathstar.

Tau Empire:
Commander Farsight and a fully loaded 7-man Crisis Suit Bodyguard.
This is, however, the worst deathstar unit out there. Sure they have a 3+ save, 2 Wounds a pop, and will most certainly killify anything it points at but seeing that it's a 4th Ed. Codex, anything killy like this is expensive. Meaning that after they do their job after one turn they'll crumble to the power of spammed lascannons, meltas, hidden PF's, Krak missiles, etc. which you needed that extra Hammerhead/Broaside team (which Farsight's rules deny use of) to take care of before they land.

A common Ork Deathstar is 10 nobz, cybork bodies/eavy armor, painboy for feel no pain, and individually kitted out with power klaws, uge choppas, bosspoles, Waaagh! banners and so on. Just lots of wound allocation dickery. I run such a unit when I play Orks.

I'd drop 'eavy armour. Cybork bodies is good enough and makes it hard to justify the cost of 'eavy armour.
