Ever thought of it? I plucked some off my old axe and seems nice and thin, strong and resilient. And comes in many thicknesses.
Just a tip I thought I'd share.

The difficulty here is that the guitar strings are stainless steel and securing the bits to itself is a difficult process to do with any sort of strength as it will tend to shear off when being sculpted on.

Plus they're too stiff to twist around and make the armature easily.

The wrapped strings would have a good surface to adhere to and I find ANY wire easy to twist. Even non-round ones.
I reckon the non-wrapped are good for arms and fingers.
Probably thicker the better.

Yeh I'd agree with the thicker the better since it'd be less flexible as you work with it. I'd say save them for hoses though and use wires, but if you have a ton why not give them a go anyway and see how it pans out.

How about those big staples you get in the building industry? Already the right shape, almost.
Also...CHEAP UMBERELLAS. They have thin strong round wire parts sometimes. Watch out for the next rainy windy day and spot a few dead ones in bins etc.
Always carry a pair of pliers.
