So in my upcoming game im playing with a couple of Predators with an AC/LC/Havoc loadout. The rulebook states that if I move up to 6 inches I have to snapfire with one of my weapons - and I was wondering if I coukd declare that to be the Havoc even though it cant snapfire?

Logically this would be no - but I do know there are some quirky rules when it comes to weapons on vehicles/flyers. Take the Heldrakes vector strike. After you perform this you cant fire a weapon but because flyers can have a maximum of 4 weapons you can therefore only fire 3 even though the Heldrake only has 1 weapon anyway. I was just wondering if this sort of quirk would allow me to nominate the Havoc even though it cant snapfire anyway.

1) You have to snapfire *all* weapons, bar one, as you are a non-fast vehicle.
2) A havoc cannot snapfire

You aren't forced to fire the havoc. You can always elect not to fire it.

If it can't snap-fire, it can't snap-fire

Both nos and Ascalam have it. Have another look at page 71. You aren't forced to fire anything - all possibilities state "may" or "can" - but the entry for Combat Speed explicitly covers this.

This is a bit of a tangent, but just to be clear:
Vector Striking counts as firing one weapon. After performing a Vector Strike you may fire as many more weapons as your unit type allows. For FMCs, this is one more (totaling two); for Flyers, this is three more (totaling four).
Vector Strike does NOT say, "After you VS you can't fire a weapon." How would you even interpret it this way?
