Just wondering If I'm missing something, or taking one just completely nullifies the purpose of Lootas, which is of course just long range fire support.

There's an option for a Big Shoota in the Lootas kit it looks like, so I might just make some more Boyz with those instead of the Mek + KMB. AP2 is nice, but that BS2 still hurts.

I have never bothered with getting a Mek for the lootas, and have not ever seen anyone else do so.

Simply take the bits that are in the kit, use the meks body and build yourself another loota. You're an ork player so scrapping together pieces is your new best friend. The best part about orks is the limitless possibilities you can kit bash and scratch build to no end.
