So yeah, as the title say, what's the excepted loadout for instruments and icons on Daemon units?
Is there a must take? If so which one, if not which one's better?
Anything on the subject helps, cheers

Really I believe Icons and Instruments are only useful in an army list built around deepstrike shenanigans. In that case an Icon on fast moving unit such as Bloodcrushers, Plague Drones or Seekers can be useful coupled with an Instrument to potentially bring in multiple units. (Remember the Instrument can only bring in a unit which has not already rolled for reserves).
Also it is worth noting that even if you're not of the same god, an Icon still reduces scatter to a single D6" so even without the same alignment it can be useful.

Outside of Deep Strike the upgraded Icons could be useful with their once per game abilities. The Khorne upgrade for instance can give a good assault range to Bloodletters.

One thing I've been thinking of trying is putting Icons on everything and seeing if the investment has a noticeable improvement on combat resolution or mitigating Daemonic Instability. The Icon on it's own provides a +1 to Combat resolution and if it saves a Bloodletter it has technically made it's points.

I agree that you should only use Icons and Instruments on a list designed around Deep Striking. I do use one instrument on a Plaguebearer squad though. I run a mostly Tzeentch-aligned Flying Circus, and rolling a 6 on the Warp Storm (affects enemies and Tzeentch Daemons) can hurt. So on my one Plaguebearer squad I have one instrument to allow me a reroll if one of my FMCs gets hit.
