Can an army with Zhardsnark:

1) Take Mek Gunz in the same detachment (can't take Big Gunz but Mek Gunz aren't Big Gunz)?
2) Take Mek Gunz in a seperate detachment (e.g. CAD 1: Zhardsnark, 2x Biker Troops, CAD2, Warboss, 2x Gretchin, Mek Gunz)?

I am aware IA:8 does need updating but currently is this possible?

I would say no. The PDF update of Z says the army can not include. To me this means all CADs.

When i take Z and use multiple CADs I do not use my Mek gunz

When you're going to use a character from a book written two editions ago for a codex 3 editions ago, you're going to need to be a little less strict on RAW.

The Big Gun restriction is army wide, but only if Zandshark is your Warlord. Also, you are right, there are no longer Big Guns in the Ork codex, so I guess you can take Mek Guns with him anyway.

I don't write the rules. My ego just lives and dies by them one model at a time.

Better not. As mek gunz = big gunz. And rule-lawhering is not a great way to be a propa ork player.

Zhardsnark and mek gunz can not be in same army. Regardless if they are in different CADs or other FOC. Sorry, man.

Armies:
The Iron Waagh: 10,000+ 8th Edition Tournament Record: 4-7-1
Salamanders: 5,000 8th Edition Tournament Record: 4-2
Ultramarines: 4,000
Armored Battle Company (DKoK): 4000
Elysians: 500

Also above that it states that the entire rule including the restrictions on mek guns, deff dreads etc. and making biker boyz troops relates to only when Zhadsnark is your warlord.

In my eyes that means you can take zhadsnark and have those units in your army so long as Zhadsnark is NOT your warlord.

You are right. But lets face it if you are playing Zhadsnark, he is going to be your warlord.

I actually didn't use him as my Warlord, I used my Mega-Armor Warboss with Da' Lucky Stick attached to a 15 man unit of lootas as my Warlord. Quite a nasty unit, as was Zhadsnarks unit of 10 Warbikers, the 2+ cover save on first turn flatout is just so nasty.

The fact that I won when he brought many Flamethrowers showed me the strength of the army. Though my opponent did make a big tactical mistake first turn when he dropped a dreadnought with 2 heavy flamers right in-front of that Loota squad. Luckily my Boss was up front and tanked all the wounds like a champ.

Is it not a 3+ save? 4+ from jink and then +1 for the warbike rule?

And an additional +1 because of Zhadsnarks skilled rider special rule.

Also this allows you to auto pass dangerous terrain tests, basically letting your warbikers move freely around the board.

That's actually a valid point on who is leading the army and I think I have my answer now, as well as ideas to build an army
