I agree with all of this, but I personally am a fine of blocks of units. Perhaps some units could be "mandatory" that they stay in blocks, or have a mechanic for block bonuses/morale penalties.
Say for example, a unit of cavalry charges into a unit of infantry. The infantry unit must pass a "morale check" of some type to see if they hold through the charge. If they win, then the cavalry automatically "loses" their charge, and their formation is broken up. If the cavalry unit "wins" the charge, then the block of infantry is broken up while the cav unit is still in it's original formation.
IMO, that would simulate actual historical events, as units could breakdown and the melee becomes more and more chaotic, "units" become less and less important as self-preservation and survival kick in
