I know the standard is to gloss varnish and then kill the shine with a matte finish but I was just curious if anyone stops at gloss varnishing? A few of my models aren't dulled down and I was just kind of admiring how shiny they were :-D

I stop after gloss varnish (army painter quickshade). I kind of actually like the look of the gloss. It does "dull down" after some time. They are your models do what you like with them. I know glossy is not the standard finish for models, but I like it, so it stays. You can take a look at some of my finished work in my galleries to see what leaving the gloss on looks like.

Like anything, it depends upon what you're going for.

If you want the model to look weathered or more natural, go with a matte or satin varnish. If you are going for an straight sci-fi or fantasy look, then gloss may appropriate. You may also want to use different varnishes for different parts of the model.

I've done all of the above depending upon the paint scheme. There is no right or wrong answer.

It depends on the model. Some models look strange glossy (especially if they're wearing cloth); others, like some vehicles, look great with a glossy coat!
