I'm looking for data about how different list look in terms of total weapons power and total wounds/hull points. If youd like to add data use a 7th edition 1500 point list that you play with either casually or competitively following my example.

Are you trying to make a graph or something? Why would you want a wound and weapon count of units in a 1500pt list? If I was to put Skitarii/Necrons down how would that help you? It would also be nice if you listed the models your using. Putting up something like this looks confusing tbh.
I like to look at numbers, a lot. And I think it will help me to see others list in a different light. Rather than what models and units they bring to the table how many guns and wounds did they get for the same points as me.
As for the 1500 pts I play a lot of games at 1500 or less even though I have 10k points of eldar. The main reason if it forces the list to not get as op of formations to the table.

Biggest problem I'm seeing in this potential data-gathering is that a lot of the armies' special rules are getting ignored. What is your aim on collecting the data? If it's a generic how to build your list thing, there are some better ways to do it (the one that I go off of for eldar is as follows: rule of two [make sure at least 2 units can do each role] and make sure you have something to deal with Infantry, MC's, TEQ's, AV14, Flyers, Fast stuff [high RoF with decent AP], and Mass Tanks).
If you're trying to make a compendium of what army does what... I would recommend lots of games or reading through all of the 1d4chan tactics pages https://1d4chan.org/wiki/Warhammer_40,000/Tactics#Individual_Army_Tactics. They do a pretty decent job of sumarizing how each army works and highlight some key units and stuff like that, but I've had some success just showing up to FLGS events and taking notes on whoever I face.

I've read lots and lots and played hundreds of games since sixth edition and one thing I find in common is that space marines can't die and mob armies can't be mowed down by my eldar. I refuse to play jetbikes but there must be some reason other than not using one unit for my consistent losses. I've been tabled or almost tabled in over a quarter of my games. What I kinda hoped to gather is if for the same points do some armies just get more. More wounds, more shots, better ap; things of that nature. I'm on a downhill slide of trying to not quite the game because outside of nearly always losing I love the game but I can't figure out what I'm doing wrong, my army is just overpowered by others brute force and there's no way I've found to compete with them.

I kind of agree here. I mean, I would really need to sit down and watch you play if I were to give any solid advice, but I agree that excluding Windriders, even though they are our best troop unit, is not debilitating. It is simply difficult to have any other troop choice match their damage output and maneuverability.
Looking at your other posts, I am at a loss as to what advice to give. Since I play Craftworlders predominantly, I'll try to get a few of my lists to the format for you though.
Automatically Appended Next Post: Looking at your list above, it appears you are relying on a lot of Guardians and a lot of vehicles... which I am a little sad to admit are not particularly strong. I regularly get tabled playing lists that rely on them too much.
Since you're only looking for 1500 points, I'll leave one of my casual lists here. It's generally based on Biel-Tan Aspect Warriors Spam and I tabled a Dark Angels player (predominantly bikes) with it.
