The way transport capacity reads I take it that I cannot put <Goff> gitz in an <Evil Sunz> Battlewagon at all during a fight right?

If by "a fight" you mean "a battle" ("fight" has a very specific meaning in 40k), then yes, you are correct. Orks have a version of the "normal" transport rules that limit the contents to being the same <CLAN> as the transports (plus Flash Gitz because they are mercenaries). Compare that to the Chimera or Valkyrie of the Astra Copywritum, which can carry any Astra Copywritum Infantry without regard for their <REGIMENT> or the Dark Eldar Raider, which can carry any DRUKHARI INFANTRY without regard to their <KABAL> etc.

Yes. This is a fairly standard restriction among all of the codices (e.g., ULTRAMARINES may not ride in a RAVEN GUARD Rhino).

Flash Gitz can ride in any <CLAN> transport, especially Battlewagons, because the rules say "This model can transport x FLASH GITZ or <CLAN> INFANTRY models." Like I said, they explicitly allowed Flash Gitz because they are canonically mercenaries so it makes sense for them to be given rides by their employers. There is no chance in Gorkamorka that an Evil Sunz would let a stinky Snakebite into their kustom ride.
