Um. Mortifiers, Penitent Engines and the Rhino are all listed as sold out and no longer available. Is this a joke? These are literally models that came out less than two years ago??!

It's a known website bug where some things are marked "No Longer Available Online" rather than "Temporarily out of stock Online". They're still available on the UK site.

I about had a heart attack. That's a known bug? Well they need to do something about it, stuff like this can cause major issues for people looking to buy a new army.

They are trying to - they brought the devs in-house rather than outsourcing IIRC.

IIRC, that's the status code also commonly seen for a re-boxing.
The "old" box is being retired to be replaced with the current-edition/branding box to which, because the contents are infinitesimally different, GW assigns a new SKU. Thus, the old box is no longer available because that SKU is now inactive; when it's sold through it is no longer available. Thus, as each region has differing stock levels when they're gone from one region that's the message displayed and as they're still selling that box in other regions they don't want to make the "new" SKU active.
So it's not so much a technical bug as everything is working like it should in the design. It is, however, a badly thought-out workflow that there's no way to communicate what is truly gone from what is just getting a new cardboard box. Likely the rebox quandary wasn't thought of while they were building the application, and it might not have been built in a way to allow for easy retro-fit with the numerous other systems and applications that interact with it.

If GW genuinely wanted to fix the bug they would do something about it, after all, they're not short of cash.
Maybe I'm going into tinfoil hat territory here, but it wouldn't surprise me if it's a feature of the site that they want to encourage, as it gives a "limited time only!" vibe to the whole site, which in theory encourages sales accross the board due to people not wanting to miss out.
Then again, I shouldn't rule out simple incompetence

They are trying, but it's deep in their Enterprise Resource Planning (ERP) system by all accounts. The Register did an article on it at the start of the year.

It's been brought up several times. People don't care about the how or why--the " IT PROVES THEY'RE DOING FOMO!" angle of everything plays into their beliefs so that's how it is.

But honestly the sold out online is a FOMO, but not as bad as getting on a decades long waiting list to buy a car

FOMO would be a Disney DVD style: "Sisters are going back in the GW Vault this November so if you want them buy them now!"
I mean yeah, maybe someone will see this and quick like a bunny buy every other Sister kit out there but not that many folks.
You can't make money from products you are not selling!

You buy it because of FOMO, and FOMO is driven in part by artificially shortages, I.E. the Catachan Col model, or Indomitus Box set. Constantly seeing models as "Out of Stock" drives an urge to purchase an item when it is in stock. It's why at lowes we always post signs when a particular appliance is low in stock, because it drives sales through the roof.

So GW cleverly makes items go out of stock or silly humans panic for no good reason? If GW was posting "low in stock" then you could maybe justify driving purchases, but they are simply out of stock. FW posts low in stock when items won't be made again - they're going to sell regardless and the notice is to give people a heads up.
