My main advice for painting eyes has always been 'paint the eyes first, so if you mess up and need to strip them off you're not destroying an entire paint job'.

I always paint the eye black first, then paint the whites on and leave the black portion as the iris and pupil. Rather than trying to do pupils on a white eye.

It means that my minis have black irises, but I've never had anyone mention it.

painting it black first is a very common thing. Having black pupils is also very common for peoples minis. I have demonstrated in the past painting colour pupils.
