I haven't played 40k in many years. I just have a couple rules questions.
If I have Sylleske attached to a demonettes squad, Can he move as infantry through walls?
If Syellske dies can I attached him to another demonettes unit?
If the demonettes die, can I attach him to another nearby demonettes unit?

Sylleske is still a Monster, even if the overall squad counts as both Infantry and Monster.

Because you attach him to a unit before play begins.

Only INFANTRY and BEAST models can freely pass through ruins. Syll'esske can become part of an INFANTRY unit but they can never become an INFANTRY model.
You declare which models are leading which units in the Declare Battle Formations step before deployment. There is no mechanism to change or reassign leaders after the battle has started.
Syll'esske are not a 'he'. There are two of them

There is one: The Custodes have a stratagem to attach a character to a unit in the movement phase.
And, frankly, I wouldn't assume the gender or pronouns of anyone aligned with Slaanesh, especially Slaanesh themselves.
