I saw that Monument's new AMP line has a Payne's Grey Wash. I like their Pro Acryl Payne's Grey paint.

How different is a bottled wash product compared to just thinning regular paint?

Depends heavily on the exact formulation.

It's worth noting a wash will probably have some sort of flow-improver to help the wash get down into the cracks and crevices and not just cover the whole surface more-or-less evenly.
