I've been staring at my Knights. They sit unused on the shelf, because people do not enjoy playing against them. And this makes me sad, as they are my only army and I've invested a lot of time and money into them.
But I want to play HH/40k. I really want something that people want to play against. There is another local player who has about 200+ gaunts that he's collected, and he is avoided every time he shows up to play. He's not a bad opponent, it's just that you can take a nap or watch an episode of Master Chef while he's moving his gaunts around.
I don't want to be a person that's avoided because of his models.
Can you recommend a force that's fun?
It's either that or I go 107% crazy and buy an old Armorcast Warhound Titan, some resin Sectarii and invest in the new HH 3.0.

Knights can still be splashed into other imperial armies, right? Or barring that, they have a detachment that lets them team up with admech?
Maybe consider grabbing an army that you can splash your knights into. This will avoid the problem knights present (always being a skew list), and will make it more affordable for you to get the new army together.

ATTENTION. Psychic tests are unfluffy. Your longing for AV is understandable but misguided. Your chapter doesn't need a separate codex. Doctrines should go away. Being a "troop" means nothing. This has been a cranky service announcement. You may now resume your regularly scheduled arguing.

I think you've got to say what you find fun.
Because [high points cost brick] and [horde jail lists] are kind of at the two ends of a spectrum. I'm not sure about meta - but its not hard to make a balanced list which focuses on infantry but has the odd vehicle/monster as well with most factions.

I imagine the army-wide toughness reduction will have an impact on how people view playing against Knights. So stick some spikes on 'em and grab your new codex next weekend!

Yes.
Space Marines (all varieties/chapters)
Astra Militarum
Imperial Agents
Sisters of Battle
Custodes (sort of)
Grey Knights
CSM
WE
DG
Demons
Orks
Eldar
Drukhari
Tau
Tyranids
For a real challenge try & make an "Unaligned" based force.
If I haven't listed a force it's because I don't play it - EC/ TS/Admech/Votann/ GSC {I assume I could make a fun list for GSC though} - or i have just forgotten it).
Now for the disclaimer:
I enjoy playing a wide variety of stuff, am not concerned with the meta, and have no issue with Legends.
This allows me to play all sorts of stuff.

Honestly when it comes to "everyone avoids player because of their army" this is often not just the army but the player AS WELL. 200 gaunts is fine if they pay attention and move decently and such. However if the person is a naturally slower player; takes time over things; is very precise about every moment (not a bad thing in itself) and such then suddenly the 200 gaunt army becomes a problem. Not because its 200 Gaunts; not because of the players speed but because of the combination of the two.
Personally I'm of the opinion that you will spend hours building and painting so whatever army you get YOU should want it first and foremost. You're spending the money and the time on it.
Now granted you want an army to play too and if people refuse you matches cause your army isn't as fun to play against then that is a tough situation -- its also an excuse for a cool new army to choose and honestly you've got to make that choice.
As another poster hinted at - ALL The armies are cool and fun, all of them. Each in their own creative, lore and gameplay ways. You've got to put your criteria on the table more than "I want fun". Especially because once you leave Knights; most armies can run in a variety of ways. Tyranids can run with very few models by running all the big ones; it can run with a medium sized force focused around warriors; or it can go all swarmy with gaunts. Many other larger armies can do similar; and those that don't are often in the middle-of-the-row - with the exception of Knights.
So really what do YOU want to play?
Are there lore/style choices that interest you; is there a certain kind of gameplay you really want beyond "fun". Like gun-line; or swarmy close combat; or stompy robots.
If you wanted you could splice into Ad-Mech. That would still let you bring some knights or one knight and them have skitari and tanks and medium sized mechs. You get a lot of the same themes and such but you're no longer a "knight" army.

First at foremost, it depends on your playstyle because you need to be having fun before your opponents have fun. Given that you like Knights, there are a few was you can go.
1. Big stompy monsters. Tyranids and Daemons play really well in this space, but Orks have a lot of big stompy things too.
2. Modify what you have. You could ally in one of your existing Kngihts to another Imperial army. There was a list I saw last year that everyone wanted to play against and it was a Knight Lancer, 12 Castellan Robots, and a couple supporting units.
3. Try another playstyle. I'd ask friends about trying out some of their armies if they are okay with it. It took me a while to find the army style niche that I enjoy playing the most.
However, from what you're saying, it sounds like your playgroup has a strong preference for very basic armies, can't be knights because they're too chunky, but also can't be hordes because they take too long. I'd be weary of collecting any army in that space as I'd be worried that there could be something else they don't like about it.
For me, my favourite army is Kroot. I've been playing them as my main army since 8th edition and no one ever had an issue until 10th when they became very strong. Some people still love to go up against them because it's a unique army and a challenge, and some don't because of how hard the army is to deal with. My point it, while you want to be a respectful opponent, playing what other people want to play against isn't going to be fun for you either. Find the people that want to play against what you want to play.

Thanks for the advice. I'm honestly looking at adding some Mechanicus to my Knights.
Anyone seen a decent build for the Questor Forgepact?
All I can find is naysayers who say, "It's horrible, don't play it."
P.S. I do like the idea of dropping a Knight into a Kastellan Robot Army.

It's probably a bit better with dramatically cheaper big knights that rely more on wounds than toughness to survive. The regen may be actually functional and the reroll 1's enhancement is solid.
