Anyone know where I can find some chains small enough to model on some aspiring champs?  I have heard that maybe doll jewelry might work, any better ideas?

Most hardware or modelling shops should have some pretty fine decorative chain. If not, what about Green stuff? Or using Kharn the Betrayer's chains?

black templars have a lot of chains a few hand swaps with those little chains with the skulls at the end from the veical assory sprew prehapps some kroot and ogre meat hooks too

Some of the assorted Dark Eldar hook & chain bits would work. I think that they come on one of the biker sprues.

Yeah, I bet if you got a length of the fine (as in small and cheap) jewelry chain you could simply wrap it around whatever model you choose to use as your host before the match.
