Yeah, looks like he forgot to mention using the milk frother to remove excess dip. You can see the box he used to contain the splatters.
Personally it isn't much more difficult to just paint the dip/stain on. Takes a bit longer but then there is no mess to clean up, no hardware to have on hand, no worrying about getting the stuff on your hands (or getting a finger print on the dip while trying to remove it from the spin appartus. You also have a bit mor control (more dip in the under areas, added dip in places you want darker, etc). Plus it is easy to 'dip' the big stuff, much more problematic using the normal dip method.
Also some highlights are not a bad idea. The stain acts like a wash over highlights, toning them down and making it harder to see imperfections. A couple of extra streaks of highlights on tyranid carapace goes a long way to making the model look good even when obviously shortcutted via dipping.
