I have 3 chaos bikers and find that they get shot up one the first or second turn or when they assault they die fast.

Whats the best number to field and what are some good tactics?

chaos bikes arent that good because they are just too damn expensive. they need to be about 30pts or less.

if you want to have them anyway you need to take them in big squads with IoN, a champ with a fist and meltas. 10 T6 terbo-boosting bikes isnt easy to kill. you can stick a sorcerer with rot/wind in there with them to give you a bit of extra punch. unfortunately it all clocks up as over 500pts so you are probably better off spending the points on something else.

Chaos bikers are the stalemate breakers. If there are units in CC that just can't seem to beat each other, the bikers hop in, deliver a few power weapon hits, and break the stale mate.

The best way to do this is in 2 large squads. Give them Meltas so that they create an area where commanders are hesitant to place their tanks. For the most part, have them go from cover to cover, until they can pounce.

Chaos Bikers are also fantastic units to deliver Summoned Daemons to the right part of the battlefield.

Also, unlike Raptors, they can deliver rapid fire plasma fire before piling in, and they have a slight advantage in speed (would be a big advantage but they lose to the mobility of Raptors).

As Shrike78 says, they're also excellent tank-hunters, but I'd disagree with him about the stalemate breakers: leave that to Raptors since their mobility will get them where they're needed.

Not to say Bikers can't handle combat, just that they're better zooming around using their firepower to threaten any units on the board, and leaving a trail of Summoned Daemon units behind them.
