Im intarested in which races excell in which areas of the game. I know that necrons excell in shooting whereas chaos excell in melee.
but who has the best psychers?, and what are witchhunters,deamon hunters good for?

I agree with sourclams. Its hard to generalize. Nids are cc monsters, but when played alternatively a force made up of warriors can put out an impressive amount of firepower. (6 warriors can put out 24 shots that reroll to wound along with a dakka tyrant who can put out 12 shots that reroll to hit AND wound).
It depends what variations of each army that you play.

Be careful about your generalizations. Chaos doesn't excel in melee, although they do have a few units that can make a decent showing for themselves if they do get stuck in. Witch Hunters are good for fielding dozens and dozens of power armored flamer, melta, and bolter troops. Daemonhunters can put lots of Land Raiders on the table.

Though it is hard to generalize, there are some things that remain constant throughout all of their builds. Such as space marines utilizing, their toughness, orks utilizing numbers, and necrons focusing on MEDIUM RANGE shooting.
You shouldn't generalize based on things like CC, or shooting, or maneuvering, because every army does it differently.
But to answer the OP: I don't know about psykers, but GK and WH excell at medium range and are good against psykers

This is only my opinion as I play Tau, SM and Ork only
Marines : Able to wether the storm with high toughness
Chaos : (Guess)The same I think with zesty options
Tau : Ranged shooting not cc
Orks : CC all the way and massed troops
Necrons : (Guess) resiliance to being destroyed
Guard : Mass troops and ranged weapons
SOB : Girls in tight armour with flamers baby
Eldar : Extremely quick, but lacking toughness in area's
Dark Eld : (Guess) same as Chaos only not as tough

I think Daemonhunters are good for hunting daemons, but I could be wrong. I've never been able to figure out what witch hunters hunt though.

Yea, most armies (especially recent ones) have multiple biulds. Orks can go green tide (CC, with some shooting), shooting (shooting, with some CC), or Battlewaggon heavy (think you can take down 8 AV14 vehicles?, with some CC). Orks are generally CC, but they can make strong shooting biulds (just sheer volume of fire is easy to obtain).
Guard are always shooty (sorry, they just can't do CC), but they could do gunline (pure infantry), gunline (with tanks), pure mech (all tanks or infantry mounted in tanks), or drop troops.
Chaos can really do a lot. They can be shooty like marines, with a bit of CC ability if required, multiple dedicated troops (1 CC, 1 shooty, 2 general), mechish, kinda MC heavy, or just pure CC. Some of these lists may look similar, as they can have shared elements that can change with playstyle (Marines in a Rhino come to mind).
Thats all I really have time for, but most armies have multiple strong biulds that differ greatly, and can be either CC, shooting, or both.

This is very True, I have two Marine armies, a Blood Angels which is troop heavy with nasty CC ability and my custom Chapter that is vehicle heavy with tons of firepower over cc ability.
Means I can play different styles with the same army. If it was rigid then the army would get boring fast as there would be no room for variance.
Heck, even Tau can be given some nice CC options if you really wanted to go down that road.
