Okay as this poll could be huge we will start around 1991 with major realeases, if i miss out anything you love then sorry.
But for me it had to be Fallout 2, i have lost track of how many times i have played through that game. Followed closely though by Baldur's gate 2 and Dues Ex

Diablo is a favourite for me in terms of action-roleplay, but KOTOR is really immersive. The morality system is fun to play with too.

I voted for kotor simply because I have played and replayed that game so many times that I've lost count. Quite an impressive list you have though, it was difficult to choose, maybe you should reduce some of them to developer categories ( i.e. bethseda, bioware, etc.) If Mass Effect was in the list I would of had to break out some dice to decide for me haha. Anything developed by bioware is usually worth buying in my book, can't wait for dragon age.

Morrowind, most definetly.
I've played more hours of that game than any other PC RPG I can recall (not counting MMOs). Probably somewhere around 400 hours total on all of my characters. Though I don't really play it anymore, that's probably because I've beaten literally every quest in the game, gotten all my skills and stats up to 100, have a full suit of every armor, over a billion septims, etc. I got to the point where I knew most of the NPCs by name (sad, I know). I could probably beat it blindfolded. The skill system is the best ever to be implemented into an RPG so far, and it does a really good job of ever-so-gradually changing you from a fledgling ex-prisoner into a god incarnate.
Daggerfall is absolutely brilliant as well, and it has more playtime packed into it, but it just isn't as immersive as Morrowind. In fact, due to Morrowind, I've slogged through every Elder Scrolls game ever made (from Arena to Redguard) for the PC. Arena ran at something like 5 fps, too, due to some crappy MS DOS emulator. My blind faith in Bethesda Softworks is unwaivering.
I've also spent more time than I probably should have with Diablo II, back when it first came out (used to have a level 99 Necromancer), and I love the Deus Ex Franchise (probably because it takes something similar to the Elder Scrolls basic system and transplants it into a sci-fi environment).

The original Fallout for me. I don't know how many times I've played through this with wildly different characters.
Good/Evil/'Mercenary'
HtH, Melee, Sniper, Heavy Guns, Balanced
Diplomatic. Sneaky, Thief, Tech-guy, etc. etc.
One of them that really sticks in my mind is the psycho killer I had that was all about Melee and hammering people/critters to death. It was all about the Supersledge.

That is a hard one for me. It would be even harder if you had included in the poll any of the other Ultima games ( especially 7), the Wizardry series, or the SSI AD&D games. More recently there are a series of games called Avernum that caught me for a while. At first glace I was going to say the original two Fallout games, but after thinking about it a bit, I had to say Ultima Underworld. That was a game that kept me enthralled for hours at a time. I was just fascinated by the idea of this fallen civilization living in a giant cave. Of course, part of the reason the game takes place in a cave is that technical limitations of the time wouldn't allow rendering of the vast open spaces that are being rendered today, say in Oblivion. Therefore, one of the most interesting aspects, for me, of that game comes from what could be construed as a technical limitation. That is very interesting.
If I had to say the games that tie for first place, for me, I'd say: Ultima Underworld, Ultima 6, Ultima 7 and Serpent Isle, and Wizardry 7
I'd also say a close second would be any number of games in the Final Fantasy series and Ultima Online.
