Up to you, actually. Towed guns are cheaper, but are more vulnerable to small arms fire and particularly being pinned by counterbattery fire. They also tend to take up a lot more board real estate then their self propelled counterparts. No mobility either, so once they're placed they're staying there short of breaking the guns down and using trucks to move them around (not really feasible in most games).
Self propelled guns can't be pinned and can always use their mobility to run away if hostiles start to get close. In addition, they can also be used as direct fire weapons by driving up to the target and shooting them at close range (not really recommended, but an option). You do pay for these abilities though.
Most British players I see use Sextons (or Priests) in single gun troops as supplementary fire (smoke and killing the odd target). The full gun troop is usually taken as the stationary guns and used when the Brits want to just devastate the opponent with multiple barrages from the guns.
