I have done this only once with Crimson Fist marines vs, a Britonian army and the fantasy army did well for some reason. What would be 2 armies that would be a great battle?

8,000 point Sam Hain Eldar.

In your base, ignoring your logic.

My friends and I had a marvelous idea on a 40k vs Fantasy battle actually. It was much larger than yours though as it was 10,000 vs 10,000.

We planned to have a 10,000pt Skaven Army vs 10,000pts of Imperial armies. 2,500 for four individual imperial armies, 3 IG and 1 SM army.

The imperials were defenders and the Skaven were attackers, reasoning behind their armor and weapons was that they use the warp powers and scavenged some newer weapons from warp beasts or other armies and civilizations.

Unfortunately it fell through as the Skaven player moved and no one else felt like getting 10,000 pts worth of skaven.
