I don't have much experience with Easterlings, but from what I can tell, they're pretty much a defensive heavy infantry army, not that unlike, say, Gondor. If you're playing pure Easterlings, then your army is pretty much going to be Easterling warriors and Kataphrakts, which isn't the end of the world. You'll want to keep your sword/shield and spear/shield warriors in tight formations to benefit from the special rule Easterlings get, with your Kataphrakts behind, ready to strike at important targets. I would recommend getting a few blisters of Easterling warriors to augment the warriors from the box set.
If you don't mind mixing it up, Easterlings fit right in with the rest of the Mordor army so a detachment of orcs would do well - I would suggest Morannon Orcs to get some more S4 into your army.
As for your brother, with any elf army, he is going to want to max out on archers. His essential strategy is going to be maximizing the amount of turns he can shoot his enemy before his elves mop up what's left. Again, Elves are more of a defensive army, preferring to let the enemy come to them than going all out.
