I am building a Panzerkompanie as I love my tanks. I was looking at starting to play in an escalation league as my entry in to the gaming aspect (first game, first league). So, we are allowed 1 combat platoon for the first round at 600 points. I was looking at this army:
HQ - 2 Panzer IVH
CP - 3 Panzer IVH
DSP - 1 Tracked Panzerspah Patrol (Luchs)
Total Points - 595

How would this hold up against something like an all infantry army which I expect to see for the first round?

These are models I have now. I do also have 2 - Gepanzerte Panzergrenadier Platoons but their min points take me over the point limit by 5 points when I add it to my Panzerkompanie. Other than that, I have Stug Gs, Panthers, and Tigers waiting for the higher point rounds.

As much as possible, I do not want to run without my tanks meaning if I can go without infantry, I will. BUT, if everyone thinks I will get wiped by my opponent, then I may consider dropping my Luchs and make my infantry Panzergrenadiers instead without their half tracks. Let me know what you all think.

If You need to squeeze in some infantry, You could go with Panzerpioneers instead of GPG. For the first game You could discuss with the oponent and proxy Your GPG as pioneers and pretend that their halftracks have bridges as 251/7s .

I don't really want to have infantry as I wanted an all tank list. Which is also why I use GPG (Armoured Infantry). Would my all tank list get demolished by an all infantry list?

FoW rewards combined arms approach, but it is difficult to achieve in small-points games, especially with tanks and especially with Germans. I am putting together another German Panzerkompanie list now, but at least I am not limited to 600 points. The issue with this list is that You only have 8 tanks of which 3 are light tanks. What missions are You going to play? Any objectives etc? Tanks are good at taking them, but then they tend to struggle with holding them, especially if they have to hurry up and take another.

Depends on the terrain as well. Tanks in heavily built up areas are going to pay dearly to infantry assaults, on the other hand, if the terrain is not too thick, the infantry should be no problem for your tanks.

Is this mid or late war? In late war infantry have more AT resources as well.

It all depends on your opponent's forces. In general armored forces in escalation leagues are a bit hamstrung from the get go because it is next to impossible to get decent tanks and more than 2 platoons. Against British Airborne or any US force you can expect to face plenty of PIATs and Bazookas that will cause havoc on your tanks. Russians can also get a TON of guns. With proper dug in AT gun support you are going to have a tough time taking the fight to the infantry. We are currently in the 3rd week of our local LW escalation league. I play British airborne and my 6pdrs have completely crushed and stymied my opponent's armored forces, pretty much destroying every enemy armored vehicle on the table each time. Even in places where it doesn't look like much of a threat because the 6pdrs are out of range, AT10 PIATs are still a major threat to opposing armor. Dug in fearless veteran infantry with solid ATG support are a very tough nut for armored forces to crack, especially at 600 points. It is really hard to have enough tanks on the table to be effective at that level.
