a) Usually ten or less, and it's fairly independent of points value (it tends to be more powerful models in higher points games than more models).
b) Forget most of what you've learnt from 40k. Infinity is a much better balanced game, and there's no real "must haves" or "must avoids". The only big requirements in a force selections are having a lieutenant and sticking within your points, SWC and AVA limits.
Other than that, think of an Infinity force very much like a special forces squad from an action movie. You'll have some combination of the leader, the heavy weapons guy, a sniper, a scout, a close quarters guy, a demolitions expert, some general purpose tough guys, some more unusual specialists in some cases, etc... if you pick a force like that based on which models you like the look of most, it'll be hard to go too far wrong. It'll give you a variety of troops that'll be able to deal with most kinds of trouble.
However... don't get into it too fast. Start small. Try a few games first with only a few basic troops - use whatever 40k models you happen to have as proxies. It's best not to dive at the deep end, drown yourself in a load of special rules and get put off.
