It should be noted there can be a lot of overlap between the domains of the Chaos gods. Those who love battle can fall to Slaanesh OR Khorne, and those who love executing perfect plans can feed Tzeentch OR Slaanesh.
Nurgle: Largely lords over aspects relating to stagnation or decay. He is the expression of the mortals fear of change, which includes fear of death. Ironically it seems he may have become the lord of pestilence not because he feeds off of pestilence, but because it increases mortals fear of change/death. As it naturally served his interests, it came to be a part of him. Aspects include acceptance, familial love, home and hearth, stagnation, decay, disease, sleep, lethargy, laziness, and defense. If it involves sitting in one place, it is at least partially in his domain.
Slaanesh encompasses most pro-active, enjoyment aspects. He/she/it is an expression of mortals desire to experience. Most anything you have to work to enjoy and actively seek out: Romantic love, the hunt, beauty, perfection, and all forms of pleasure seeking and excess. If it involves loving something to excess Slaanesh is pleased.
Tzeentch encompasses all forms of pro-active change. He is an expression of mortals continual drive to change the world around them: hope, planning, trickery, magic, progress, invention, self improvement, creativity, etc. Change for its own sake. If it involve pro-actively changing the status quo, Tzeentch feeds.
Khorne is perhaps the best defined. Anything and everything martial, anything that results in a good conflict. He is the embodiment of the primal emotions of conflict all life must go through to survive and thrive, and thus the oldest, and perhaps most powerful Chaos god. Defending your family/country, martial honor, martial skill, bloodlust, etc. Whenever life battles life, he feeds.
Obviously the Chaos gods can cover more than just the negative, but the problem with them is that they are inherently amoral. Their only drive is to harvest more of the emotions in their domain.
So by definition they are not interested in moderation. Slaanesh wants as much pleasure to be generated as possible, Khorne as much conflict, Tzeentch as much change, and Nurgle as much stagnancy. So while defending ones family MAY fall under Khorne's domain, he is far more interested in creating berzerkers who create as much conflict as possible. Art and beauty may fall under Slaanesh's domain, but in the end he/she/it pushes its followers to ever more depraved acts.
They are the manifestation of mortal emotions, and thus are ONLY interested in those emotions, not the mortals themselves.
It may have been that were the galaxy a more balanced place they would reflect that, and not push their followers down the path of excess. But at this point, like just about everything else in the warp, they have clearly been driven insane by the glut of powerful emotions being pumped into the warp by the mortal psyker races.
