I think it may be a mistake to go the plasma route against the zombies mobs. You are risking quite a bit of deaths due to the “It gets hot” rule with little relative return. It might be better to use grenade launchers against the zombies - krak will splatter a zombie just as well as a plasma shot and frag can be used to blanket the multitudes.
I am pretty happy with 60 zombies per assault as a base. Previous games in 5th edition seem to indicate that the balance was about right; I don’t think 6th edition swings the balance of power too drastically to the defender’s favor. The zombies might have to deal with overwatch, but they no longer are dealt "no retreat" wounds and they gained in assault range.
