I am thinking I am going to run them with units of three, 2 meltas and a combi-melta, powerfist champ and mark of nurgle.

You? And how many? With toughness 6 I am not sure if it's really worth investing into more bodies.

Well, I'm using a unit of 6 with MoS, IoE, 2 meltas, Champion w/ power weapon. melta bombs led by a Lord on bike w/ MoS and whatnot.
An alternative would be to run the Lord with a unit of Spawns.

I have considered a lord escort. Perhaps a Khorne one with Jugg and the Fury Axe. It would make him extremely dangerous in close combat, and the toughness 6 bikes make for good wound sponges.

No entirely sold on the MoS ones, simply because if you have toughness 6 you dont really worry too much about other power weapons, so you might as well go fist with your champ. It WOULD be worth it with symbol of Excess though, but that's starting to get pricey.

I guess chaos spawn make better bodyguards anyways, what with the 3 wounds. Can Calvalry join beasts?

The codex says that a character cannot join a unit with a different mark.
In my Nurgle marines, I run a unit of 7 bikes with MoN, champ w/fist, 2 meltas, and icon of vengeance.
They are led by a Nurgle sorcerer ( or two ) w/one Nurgle and 2 biomancy powers each.
This unit packs quite a punch.
Very mobile.
Anti vehicle & anti troop roles.
Great assault unit.
Powers enable buffing of your own units as well as weakening enemies. Gift of contagion+enfeeble= instant death twin-linked bolters.
For what you get, it is not prohibitively expensive.

Anyway, I am having a lot of fun with this unit these days.

An IC can generally join a unit even if he's cavalry (or bike) and the unit consists of beasts.
